Senêt will speak about the notion of balance in healthy cooking, which comes less from counting nutrients (calories, proteins, vitamins, etc) and more from underestanding the energetic qualities of foods using the macrobiotic principles of yin and yang.

 

Next, you will explore with him how to prepare the basic building blocks of healthy cooking: whole grains, beans, seasonal vegetables, among other things. He will show you how to increase the flavors using Japanese condiments such as miso, shoyu and umeboshi, and he'll speak to you about the question of sweets and how to incoportate healthy sweets into your daily diet to support your health.
